Here\'s this week\'s Weekly Recipe:
Black Bean and Corn Salsa from Elaine Westring
Ingredients
• 1 15 oz can black beans, drained
• 1 16 oz can corn, drained (mexicorn is also good!)
• 1 14.5 oz can diced tomatoes, juice included
• 2 cloves garlic, finely chopped
• 1 bunch green onions, thinly sliced
• 1 tablespoon chili powder
• 2 tablespoon cilantro (I use dried unless it’s summer and I pick it from my garden)
• 1 teaspoon cumin
• Juice and zest of 1 lime
• Salt and pepper to taste
Directions
1. Mix together and enjoy!
